Cocoa Coffee Steak



Today, I learned that I don’t care for the chili-chocolate flavor combination that has become popular recently.  Adam, however, does.  So this recipe was a bust (in my opinion), but a win in his.

1) Mix 2 tbsp 100% cocoa, 2.5 tbsp ground coffee, 2 tbsp ancho chili powder, 1 tsp sea salt, 1/2 tsp black pepper

2) rub it on your steak, patting it into both sides, and let sit for about ten minutes (we used it on both bison and beef)

3) pan sear on both sides in olive oil or butter, then finish in the oven at 375 degrees (so chocolate doesn’t burn)
